About This Place

Nestled in the charming coastal town of Pacific Grove, Pavel's Backerei stands out as a distinguished European-style bakery where artisanal craftsmanship meets bold, authentic flavors. This isn’t your run-of-the-mill bakery — it’s a shrine to elevated pastries and hearty breads that captivate both locals and visitors with every bite.

From the moment you catch a glimpse of the persistent line outside, it’s clear Pavel’s Backerei is a beloved institution. The aroma of freshly baked goods wafts through the air, drawing you in with promises of buttery, flaky croissants and robustly flavored breads. Their croissants, in particular, have garnered rapturous praise. One devoted customer described their chocolate croissant as “the most savory croissant I have ever eaten,” elevated further by a subtle hint of salt that dances perfectly on the palate.

For those who favor a balance between sweet and savory, the menu is a treasure trove. The Almond Bear Claw and Raspberry Tart offer a satisfying mixture of crisp pastry and rich fillings, bursting with premium fruit flavors that speak of quality ingredients. Cinnamon Rolls here have reached near-mythical status among patrons; as one enamored visitor aptly stated, they are “out of this world,” worthy of enduring a wait in line and bringing cash — the bakery’s preferred payment method.

Hearty bread lovers will find an inviting array, from the 9-Grain Farmers Bread to the rustic Burnt Campania Bread and the ever-popular Baguette and Brioche. These loaves feature more pronounced, nuanced flavors and a satisfying crunch that defies traditional softness, delivering a chewiness that is unexpectedly delightful. Even the Farmers Breakfast Brötchen offers a different take on breakfast buns, though opinions vary on its simplicity, with its baked-in egg providing a straightforward yet classic taste.

Beyond breads and pastries, Pavel’s also offers intriguing select items like craft beer, a giant donut that’s as fun as it sounds, and the famed Pastel de Nata — a Portuguese custard tart with a perfectly caramelized top that melts in your mouth.

What truly enriches the Pavel’s Backerei experience are the heartfelt customer stories. A couple’s early morning visit, arriving as early as 7:15 a.m. to secure their pastries only to find a long queue, showcases the bakery’s undeniable popularity. Though a cash-only policy surprised some, the friendly staff’s willingness to hold orders until customers returned with payment speaks volumes about their commitment to customer satisfaction.

Every item from Pavel’s Backerei feels thoughtfully crafted, combining traditional baking techniques with a passionate flair that elevates each bite into a memorable experience. Whether you’re savoring a flaky, chocolate-filled croissant, indulging in a sweet raspberry tart, or discovering the rustic charms of their artisan breads, this bakery beckons with a promise of authenticity and culinary joy that lingers long after your last crumb.

Oh my! The cinnamon rolls are out of this world. This bakery has pretty much perfected the art of pastries. The line of customers out the door says it all. Worth the wait. Be sure to bring cash as that's all they accept.

Based upon the recommendation of friends, my wife and I arrived at Pavel's at 7:15 a.m. only to find a considerable line already formed outside. After 35 minutes we got to the front and placed our order only to learn they only accept cash. Happily, they set our order aside and told us we could return later with cash and pick it up. We did and my wife raved about her chocolate croissant, saying it was the best she had ever eaten. It's been a couple weeks now, so I don't remember what I chose, but it was also wonderful. We also purchased other items including a loaf of sourdough cheddar cheese bread which makes the best grilled sandwiches. Their selection isn't huge, but what they have is to die for. If you're in Pacific Grove on a Tuesday or Saturday, don't miss it, but remember to bring enough cash! The line starts forming around 6:45. Oh, I should explain there was a fun, "weird Barbie" display set up outside to help pass the time while we waited.

This is not a bakery. This is a European pastry shop with culinary elevated types of desserts, breads and cookies After finally making my way into the shop around 2pm on Saturday, I was fortunate to purchase a chocolate croissant filled with chocolate. It was the most savory tasting croissant I have ever eaten. With a little bit of salt to bring the whole thing to another level. I want more. I also bought the Cinnamon roll which makes other cinnamon rolls put to shame. One of the lightest, airiest rolls that I've ever experienced. While I was in line, a Gentleman was there for the chocolate chunk cookies which they sold out of before we both got there. The shop is only open on Saturdays as I spoke with the owner and she said that her husband and her wanted to retire but, could not find anyone suitable to learn the recipes of the shop. This shop is amazing, please encourage the owners to keep it alive.

Loved the sweet pastries. Tried the savory farmers breakfast brotchen. It’s just an egg baked into the bun… not much flavor honestly. Partner and I were impressed by their sweets though. The pastry bread was more firm than your typical ones but not in a bad way. I hadn’t tried something like this yet. They’ve got great crunch if you like that. Don’t expect soft and fluffy except for the cinnamon bun. My first tier recommendations: -peach apricot danish (the best one and we tried everything except the berry one) -cinnamon bun (huge! soft and fluffy. not very sweet) -chocolate croissant Second tier (good and I would eat again but would rather buy the first tier again over these): -fauxnut -apple danish, berry cream cheese danish -biscotti

It was love at first bite. One of the best bakeries I've ever been to. Stopped in for breakfast while staying in Pacific Grove and got a variety of items. The bread here feel a bit heartier and the flavor of the bread itself is more pronounced which I love. Come with an appetite as the food here is filling. The tarts were especially good, the fruit they use one them tastes of good quality. The place is cash only.

Everything we tried was outstanding. We loved the sesame bread and butter horns.
